Introducing a new format of classes, The Culinary Workshop is a series of cooking classes that have been meticulously designed to build a complete and reliable foundation in culinary arts. By progressing through the sessions taking place every first or second Saturday of the month, students move from handling the most basic tools to mastering complex cooking methods, understanding the fundamental relationships between flavour, texture, and heat.

Day 1: Sauces

This first lesson will teach not just how to make the 5 fundamental sauces in classical French cuisine as codified by Chef Auguste Escoffier, but also to understand the techniques and ratios, which will then allow for hundreds of derivative sauces.

  • Learn to make the 5 Mother Sauces (Béchamel, Velouté, Espagnole, Sauce Tomate, Hollandaise)
  • Learn how timing, ratio, and heat affects each type of sauce, and how to gain control of the variables to achieve the textures and flavours you want
  • Learn how to troubleshoot common problems when creating these sauces
